These Ribs start with using my SWC Honey, Habanero & Black Truffle Hot Sauce as a binder. Then they get a three hour smoke with the rub while been spritzed regularly before the wrap with butter, honey & brown sugar. When these are done bbq sauce isn't even needed and they are so good. I am all about smoking food but sometimes... I need some fresh steak tartare. Always use a great meat supplier for this and I typically do this with a filet or even tenderloin tails. I always use a good stone ground mustard, green onion, shallots, baby kosher dills, capers, flat parsley and sometimes top it with some diced up sun dried tomatoes. For the base I use French bread toasted with garlic butter that is mixed with my SWC hot sauce. Whenever I make this I can't get enough. Spread Love Thru Food.
This great appetizer could also substitute as a fun lunch. Fresh made Tortilla Chips are used to scoop up the diced Ahi with fresh tomatoes & red onion that all get mixed up in my Ahi sauce. Beautiful Chicken Drumsticks cleaned up... then smoked & deep fried before being dunked in the SWC Honey, Habanero & Black Truffle Hot Sauce for incredible flavor. These sandwiches uses chuck roast that was smoked for a few hours then finished in an au jus with onions before being shredded for some incredible sandwiches. Pile the chuck roast into some French bread that was toasted with garlic butter and provolone cheese. I finish it off with a cheese blanket then topped with a healthy portion of my SWC Honey, Habanero & Black Truffle Hot Sauce. This is a sandwich you will have cravings for... Spread Love Thru Food.
This sandwich is stuffed with beautiful smoked Beef Short Rib sliced into bite size pieces, with melted pepper jack, fresh greens, tomatoes, grilled mushrooms & onions and topped with my horseradish aioli all on a toasted ciabatta bun. Spread Love Thru Food.

Our pastrami is more like a Reuben... technically a Rachel because a Reuben is with corned beef. Once you try it you won't care what it is called because it is amazing. Other than my brine and smoked pastrami... my secret is melting the gruyere into the sauerkraut... as well as slightly toasted the inside and outside of the Marble Rye. It all starts with a beautiful lamb should from my friends at Billydoe Meats(click here) I like to do my lamb shoulders a couple different ways... I can do them to a nice medium rare or I can smoke them to an internal temp just under 200. For these sandwiches I smoke them. This pulled lamb is amazing on garlic butter toasted French bread, with a provolone or even goat cheese on the bottom and a nice marinara sauce on top of the pulled lamb.
